I was walking through the grocery store and wanted to make some type of seafood. I was thinking either Halibut or Salmon, but then I saw scallops!
Scallops are very delectable and low in both calories and fat. Most people avoid shellfish because they are generally high in cholesterol. They are a good source of potassium (cardiovascular health), magnesium (blood pressure), and phosphorus (important for strong teeth and bones).
I needed to make a dish that was fast, easy, and very tasty. I came across a recipe that was for asparagus in sun-dried tomatoes, but decided to substitute that with portobello mushrooms since it was all I had.
Thanksgiving is a time when we appreciate what we have. Not saying that we shouldn’t appreciate what we have everyday, but that we take that one day, that moment and spend it with family and close friends! Everyone gets together to enjoy savory meals and luscious treats! It is where we take one day to celebrate diversity in its purest form and what better way to do that then with a huge feast!
