I remember the time I first heard about Margarita pizza. I thought it was for grown-ups only because of the word Margarita. My parents had ordered a margarita pizza once and I was shocked when they handed me a slice! Haha… little did I know it wasn’t made with alcohol! It is now one of my favorite classic pizzas.
I know I love to post chicken recipes… but here is a yummy recipe for all the vegetarians! Isn’t it when you go to Mexican places, the only vegetarian dishes they find are with beans and cheese (generally). So frustrating no? There are so many other veggies they could improvise with and the closest taco spot I’ve been to that has been courageous enough to experiment with different veggie options is Tacolicious.
It’s just one of those days when you are so, so hungry, but you don’t want to be cooking in the kitchen all night. I opened my pantry and found a packet of buckwheat noodles and a bottle of mushroom based Soy-sauce. I immediately thought about a stir-fry and my mouth began to water. That was what I needed to make to hit the spot!
I was not sure if I wanted to make cold soba noodles, Zaru Soba, or HOT, like ramen (noodle soup). Soba is the Japanese name for buckwheat (also means the noodles made from buckwheat flour) and Zaru is a bamboo basket/place setting.
I needed to make a dish that was fast, easy, and very tasty. I came across a recipe that was for asparagus in sun-dried tomatoes, but decided to substitute that with portobello mushrooms since it was all I had.
Stuffed peppers are fun, easy dishes to make and are great to make when you have people coming over, vegetarian or non-veg. This case I didn’t make them for guests. Instead I made them for my best friend, brother, and father. I was leaving to go on a trip to Los Angeles and I didn’t want to waste the remaining vegetables I had left in my fridge. Generally, stuffed peppers are made with bell peppers, but I always like to add a kick in there somewhere, so I used poblano peppers instead. They give just enough kick for those who don’t enjoy much spice, as well as, those who love to eat spicy foods.
Moroccan tagines are clay or ceramic cookware that have a very unique design used in North Africa. They are earthenware pots that are painted and glazed with a distinctive conical cover.
Although they are originally referred to as a tagine pot in which the dish is cooked, in Arabic, tagine means stew. Now tagine can refer to the dish, as well as, a type of stew. Tagines are generally spicy and have some type of protein incorporated. Vegetarians of course can eliminate the meat option. I have made this dish vegetarian.
I wanted to try a new international recipe the other day…something different but similar to Indian food. Something that was nutritious, flavorful, and simple, but wonderful! I came across a version of the Turkish Red Lentil Soup with Chard that had a small twist to it and tried to put my own little spin on it.
I am huge fan of yellow daal (Lentils in Hindi). Toor Daal, or split pigeon pea as some may call it, is a member of the legume family.
This traditional Indian dish is often served with rice and a staple in many Indian restaurants and households. There are also many reasons why toor daal is a very healthy choice. An important vitamin for all women are folic acids, especially those that are pregnant or become pregnant. For vegetarians, it provides them with all the proteins and nutrients any vegetable would offer. It also has a great source of complex carbohydrates and fiber. Feeling constipated? This is one remedy given in an Indian household to help that! (No joke!) My gramps, who has diabetes, eats this on the daily! It provides him with all the nutrients he needs! (we add spinach and other veggies to it for more flavor).

This past weekend I had a group of friends over at my place to watch the NFC Championship game, which was amazing! As I had last year, I made a fully loaded, tub of turkey chili (you can substitute the minced meat for more beans and/or tofu). It was a hit! Turkey is a leaner meat than chicken. Its a healthier choice for a healthier diet! No saturated fats…. even better!
When I come home from a long day, I want to make a quick snack, I want to eat something substantial and not too heavy. One simple, easy, and fast meal to make is a simple bean burrito and pair it with a yummy salsa (store bought is much faster of course).
