I know I love to post chicken recipes… but here is a yummy recipe for all the vegetarians! Isn’t it when you go to Mexican places, the only vegetarian dishes they find are with beans and cheese (generally). So frustrating no? There are so many other veggies they could improvise with and the closest taco spot I’ve been to that has been courageous enough to experiment with different veggie options is Tacolicious.

I know I have been absent lately from posting recipes! I will be up and at them once again, possibly after a couple of weeks! My schedule has been a little hectic lately and will die down a bit soon. Can’t wait to get back to cooking! Ciao for now!
It was a Saturday night, and I had a couple of people joining me for dinner. I looked at the time and realized I was cutting it real close to the time they were to arrive. (Sounds like the start of a story right? 😉)
I wanted to be adventurous and make a scallop dish that wasn’t going to take too long and not be very difficult. Scallops, when bought fresh from the supermarket or deli, do not take very long to cook. If you are baking them, about 10 minutes. If pan-seared, then maybe about 2-3 per side.
Shrimp… I would have never thought in a million years I would enjoy it. The texture of shrimp doesn’t settle well with me. I realized how wrong I was after having this dish!! Maybe I had a bad batch, who knows!
Tom Rim, Vietnamese Caramelized Shrimp, looked so appetizing, I had to try it for myself. I did my digging and found a few recipes online. Read each one and went at it!
A dish I have been wanting to try to make for a while now is Chicken Biryani. This dish is particularly known for its layers of divine flavors that slowly develop and blend together. In order to have that aroma and ambrosial taste, biryani is a multistep process that requires a long cooking time. The flavors in the dish come from a blend of spices that are typically not used together in everyday cooking playing a big role in its rich taste.
